What makes her worth a follow?
Well, her Insta name is the biggest clue.
Having decided to quit sugar four years ago, Sarah has made a niche for herself by creating great tasting recipes that are completely sugar free (or at least contain a minimal amount of the sweet stuff).
The Australian author has released two popular recipe books and her social following continues to grow as more and more people recognise the health benefits of reducing their sugar intake. Doesn’t seem so hard when you can still indulge in desserts like the one below, eh?
Choc chip skillet cookie
Ingredients
- 60 g butter
- 1 tablespoon rice malt syrup
- 1 tablespoon vanilla extract
- 1 egg
- 2 cups almond meal
- 1 teaspoon baking powder
- Pinch sea salt
- 50g 85-90% dark chocolate, roughly chopped
- Thickened cream, to serve
Method
- Preheat oven to 180ºC / 350ºF / Gas Mark 4.
- Place a small skillet on the stove on low-medium heat. Add in butter, rice malt syrup and vanilla and stir until melted together. Remove from the heat and allow to cool slightly.
- Crack egg into skillet and lightly whisk with a fork to combine. Add in almond meal, baking powder and sea salt and stir until you form a batter. Fold through the chocolate pieces.
- Flatten the mixture around the skillet with a spatula. Place in the oven and cook for 15 minutes, until very lightly brown on top.
