5. Decadent Vegan Fudge

Coconut oil and coconut butter are great alternatives to full fat butter and olive/vegetable oils. The medium chain triglycerides in coconut oil have been shown to increase energy expenditure by as much as 5%, potentially leading to  weight loss over the long term.

Serves: 1-2

Ingredients

  • ¾ cup  pecans
  • ¾ cup  walnuts
  • 1  date, pitted
  • ⅓ cup  coconut flakes
  • ⅓ cup  cacao powder
  • 3 tablespoons  coconut oil
  • 1 tablespoon coconut butter

Method

1. Add all ingredients to your NutriBullet tall cup and pulse. When the ingredients start to combine, stop once or twice to stir. Continue to extract until the fudge reaches a thick, spreadable consistency.

2. Spread in a dish and place in freezer until set, approximately 2-3 hours.

Top tip: A cup is 250ml.
